Crispy Baked Vegan Zucchini Tater Tots

Ingredients:
2 medium zucchinis, grated
1/2 cup breadcrumbs (use gluten-free for a GF option)
1/4 cup nutritional yeast (adds cheesy flavor without dairy)
2 tbsp ground flaxseed + 6 tbsp water (vegan flax egg)
1/2 tsp garlic powder
Salt and pepper to taste
Olive oil spray for crisping
Instructions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
2. Grate the zucchini and squeeze out all excess moisture using a clean towel or cheesecloth.
3. In a mixing bowl, combine grated zucchini, breadcrumbs, nutritional yeast, flax egg, garlic powder, salt, and pepper. Mix well until the mixture holds together.
4. Shape into small tot-sized pieces and arrange on the prepared baking sheet.
