    Creamy Sausage Tortellini Soup

    This Creamy Italian Sausage Tortellini Soup is the ultimate cozy comfort food for cold nights. Packed with cheese-filled tortellini, savory Italian sausage, fresh spinach, and a rich, creamy broth, it’s a flavorful one-pot dinner that’s ready in under 30 minutes. Perfect for busy weeknights or a comforting weekend meal, this easy tortellini soup recipe will be your new family favorite.

     

    Ingredients:

    2 cups cheese tortellini (fresh or frozen)

    1 lb Italian sausage, crumbled

    3 cloves garlic, minced

    1 medium onion, diced

    2 cups fresh spinach

    2 tbsp butter

    2 tbsp all-purpose flour

    4 cups chicken broth

    1 cup heavy cream

    Salt & black pepper, to taste

    Fresh parsley, for garnish

     

    Instructions:

    Cook the Sausage
    In a large soup pot or Dutch oven, cook the Italian sausage over medium heat until browned and cooked through. Remove and set aside.

    Sauté the Aromatics
    Add butter to the pot, then sauté the onion and garlic until fragrant and softened. Sprinkle in the flour and stir to create a roux.

    Make the Creamy Broth
    Slowly whisk in the chicken broth until smooth. Bring to a gentle simmer, then stir in the heavy cream.

    Add the Tortellini & Spinach
    Stir in the cheese tortellini and cook for 5–7 minutes, or until tender. Add the fresh spinach and cooked sausage back into the pot. Simmer for an additional 2 minutes.

    Season & Serve
    Season with salt and pepper to taste. Garnish with fresh parsley and serve hot with crusty bread.

     

    Pro Tips for the Best Creamy Tortellini Soup

    Swap spinach for kale for a heartier green.

    Use spicy Italian sausage for a little heat.
