    Ingredients

    For the Meatballs:

    1 lb ground chicken

    1/2 cup breadcrumbs

    1 egg

    1/4 cup grated Parmesan cheese

    2 cloves garlic, minced

    1/2 tsp salt

    1/4 tsp black pepper

    1/4 tsp dried thyme

    For the Sauce:

    2 tbsp olive oil

    2 tbsp butter

    8 oz mushrooms, sliced

    2 cloves garlic, minced

    1 cup heavy cream

    1/2 cup chicken broth

    1/4 cup grated Parmesan cheese

    1/2 tsp salt

    1/4 tsp black pepper

    Fresh parsley, chopped

    🥄 Instructions

    1. Make the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, egg, Parmesan, garlic, salt, pepper, and thyme. Mix until well combined and form into meatballs.

    2. Sear the Meatballs: Heat olive oil in a large skillet over medium heat. Cook meatballs for 6-8 minutes until golden brown and cooked through. Remove from skillet and set aside.

    3. Sauté the Mushrooms: In the same skillet, melt butter and sauté mushrooms for 5-7 minutes until tender. Add garlic and cook for another minute.

    4. Make the Sauce: Pour in chicken broth and simmer for 2 minutes. Stir in heavy cream and Parmesan, then season with salt and pepper.

    5. Combine and Simmer: Return meatballs to the skillet and simmer for 10 minutes until the sauce thickens.

    6. Garnish and Serve: Sprinkle with chopped parsley and serve over pasta, rice, or with crusty bread.
