    Creamy Low-Carb Chicken, Spinach & Mushroom Bake

    Looking for a delicious low-carb dinner that’s comforting, nutritious, and easy to make? This Creamy Chicken, Spinach, and Mushroom Bake is perfect for a cozy evening! Loaded with tender chicken, fresh spinach, earthy mushrooms, and a creamy Parmesan sauce, this healthy low-carb casserole is a family favorite. Bonus: it’s great for using up leftover chicken!

    Yields: 4 servings
    Prep time: 15 minutes
    Cook time: 25–30 minutes
    Total time: 40–45 minutes

    Ingredients:

    2 cups cooked chicken, shredded or diced (rotisserie chicken works perfectly!)
    1 tablespoon olive oil or butter
    1 medium onion, finely chopped
    8 oz mushrooms, sliced
    4 cups fresh spinach
    8 oz cream cheese, softened
    1/2 cup heavy cream
    1/4 cup grated Parmesan cheese (plus extra for topping)
    1 teaspoon garlic powder
    1/2 teaspoon dried thyme
    Salt and freshly ground black pepper, to taste
    Optional: pinch of red pepper flakes for a mild kick

    Instructions:

    Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.

    Cook the Veggies: Heat olive oil or butter in a large skillet over medium heat. Sauté the chopped onion until soft (3–5 minutes). Add mushrooms and cook until lightly browned (5–7 minutes).

    Add Spinach: Stir in the fresh spinach and cook until just wilted (1–2 minutes).

    Prepare the Creamy Sauce: In a bowl, mix cream cheese, heavy cream, Parmesan cheese, garlic powder, and thyme until smooth. Season with salt, pepper, and red pepper flakes (if using).

    Combine Everything: Add the cooked chicken and sautéed veggies to the creamy sauce. Mix until everything is well coated.

    Bake: Pour the mixture into the prepared baking dish. Sprinkle extra Parmesan on top. Bake for 20–25 minutes until bubbly and golden on top.

    Serve & Enjoy: Let cool slightly before serving. Perfect with a side salad or roasted vegetables for a wholesome low-carb meal.
