    Creamy Chicken Penne Pasta with Broccoli & Peppers

    Creamy Chicken Penne Pasta with Broccoli & Peppers

    A rich and comforting pasta dish packed with tender chicken, fresh broccoli, and colorful bell peppers in a velvety Parmesan cream sauce. Perfect for busy weeknights or cozy family dinners!

    Ingredients:

    2 cups cooked chicken (sliced or shredded)
    12 oz penne pasta (or rotini, or fettuccine)
    2 cups broccoli florets
    1 bell pepper (any color), sliced
    1 cup carrots or peas (optional)
    3 cloves garlic, minced
    1 onion, diced
    2 tbsp olive oil
    2 tbsp butter
    1 cup chicken broth
    1 cup heavy cream or half-and-half
    ½ cup grated Parmesan cheese
    1 tsp Italian seasoning
    Salt & black pepper, to taste
    Optional toppings:
    Red pepper flakes
    Fresh basil or parsley for garnish

    Instructions:

    Bring a large pot of salted water to a boil. Add penne and cook until al dente according to package directions. In the last 2–3 minutes, add broccoli florets. Drain and set aside.

    Heat olive oil and butter in a large skillet over medium heat. Add diced onion and minced garlic; cook until fragrant and translucent. Stir in sliced bell pepper and optional veggies (carrots or peas), cooking until tender.

    Add cooked chicken and chicken broth to the skillet. Bring to a gentle simmer for 4–5 minutes until heated through.

    Reduce heat to low. Pour in heavy cream, add Parmesan cheese, and sprinkle with Italian seasoning. Stir until smooth and slightly thickened. Season with salt and pepper to taste.

    Toss in the drained pasta and broccoli until evenly coated in the creamy sauce. Garnish with red pepper flakes and fresh herbs. Serve hot and enjoy!
