    Creamy Alfredo Lasagna Soup Recipe

    This Creamy Alfredo Lasagna Soup is the ultimate comfort food, combining the rich flavors of lasagna with a velvety Parmesan Alfredo sauce. Packed with savory sausage, tender noodles, and fresh spinach, it’s a warm and hearty dish perfect for any season. The homemade Alfredo sauce adds a creamy, cheesy touch that takes this soup to the next level. It’s an easy one-pot meal that brings all the cozy flavors of a baked lasagna without the hassle. Serve it hot and enjoy a bowl of pure indulgence!

    Ingredients:

    For the Soup:

    ½ lb ground sausage

    1 small onion, chopped

    8 oz mushrooms, sliced

    2 cloves garlic, minced

    4 cups baby spinach

    5 cups low-sodium chicken broth

    5 lasagna noodles, broken into pieces

    1 tsp dried oregano

    ½ tsp dried basil

    For the Alfredo Sauce:

    3 tbsp butter

    3 tbsp flour

    1 cup milk

    1 cup Parmesan cheese, grated

    Instructions:

    Cook the Sausage:

    Heat a large saucepan over medium heat. Add the ground sausage and cook until browned, breaking it into crumbles.

    Sauté the Vegetables:

    Add the chopped onion and sliced mushrooms. Cook for 5-6 minutes until the onions are translucent and the mushrooms are tender.

    Add Garlic and Spinach:

    Stir in the minced garlic and baby spinach. Cook until the garlic is fragrant and the spinach wilts.

    Simmer with Broth:

    Pour in the chicken broth and bring the mixture to a simmer. Let it cook for 5 minutes.

    Add Lasagna Noodles & Seasoning:

    Break the lasagna noodles into pieces and add them to the soup along with oregano and basil. Simmer for 10-12 minutes until the noodles are tender.

    Prepare the Alfredo Sauce:

    In a separate skillet, melt the butter over medium-low heat. Whisk in the flour and cook for 1 minute to form a roux.

    Add Milk Gradually:

    Slowly whisk in the milk, stirring constantly, until the sauce thickens (about 3-5 minutes).

    Stir in Parmesan Cheese:

    Remove from heat and whisk in the Parmesan cheese until fully melted and smooth.

    Combine & Serve:

    Slowly whisk the Alfredo sauce into the soup, stirring until fully blended into a creamy, cheesy perfection. Serve hot and enjoy!
