    Cheesy Zucchini Rice Casserole with Stuffing Mix

    Looking for a cozy, veggie-packed meal the whole family will love? This Cheesy Zucchini Rice Casserole combines fresh zucchini, carrots, creamy sour cream, and savory Stove Top stuffing mix for a golden, bubbly dish that’s perfect for weeknight dinners, potlucks, or holiday sides. A true crowd-pleaser packed with flavor and comfort!

     

    Ingredients:

    6 cups fresh zucchini, thinly sliced

    1 cup chopped onion

    1 cup shredded carrots

    1 cup cooked white rice (long grain or jasmine)

    1 cup sour cream

    1 (10.5 oz) can cream of chicken soup

    1 (6 oz) box chicken-flavored Stove Top stuffing mix

    1/2 cup butter, melted

    Salt and black pepper, to taste

     

    Instructions:

    1. Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

    2. In a large bowl, combine sliced zucchini, chopped onions, and shredded carrots. Toss until evenly mixed.

    3. Add in the cooked rice, sour cream, and cream of chicken soup. Stir until everything is creamy and well combined.

    4. Gently fold in the dry Stove Top stuffing. This adds a savory, herbed flavor and satisfying texture.

    5. Drizzle melted butter over the mixture. Stir well. Season with salt and pepper if desired.

    6. Pour the mixture into the prepared dish and spread evenly. Bake for 30–35 minutes, until the top is golden and bubbly.

    7. Let cool slightly before serving. Enjoy as a main dish or a flavorful side!
