    Baked Zucchini Carrot Casserole with Cheddar Cheese

    Looking for a healthy vegetable casserole recipe that’s quick, cheesy, and kid-friendly? This Baked Zucchini Carrot Casserole is a delicious way to sneak in veggies while keeping it hearty and comforting. Topped with melted cheddar cheese and baked to perfection, this dish is perfect as a vegetarian main or side dish!

    Ingredients:

    50g Carrot, peeled and grated

    1 Zucchini, grated

    1/2 Small onion, finely chopped (about 50g)

    1 Egg

    100ml Milk

    1/2 tsp Salt

    1/4 tsp Black Pepper

    100g (2/3 cup) All-purpose Flour

    Grated Cheddar Cheese (to taste)

    Optional Topping:

    Parmesan Cheese or Breadcrumbs for extra crunch

    Fresh Herbs (parsley, thyme, or basil) for flavor boost

    Instructions:

    1. Preheat oven to 180°C (350°F). Grease a medium-sized baking dish.

    2. In a large bowl, mix the grated carrot, zucchini, and chopped onion.

    3. In another bowl, whisk together the egg, milk, salt, and black pepper.

    4. Slowly stir in the flour to form a smooth batter.

    5. Pour this batter into the bowl with the veggies and mix well.

    6. Transfer the mixture into the prepared baking dish and top generously with grated cheddar cheese.

    7. Bake for 25-30 minutes, or until golden brown and cooked through (check with a toothpick).

    8. Serve warm and enjoy your cheesy veggie casserole!

    Tips for Success:

    Add garlic powder, Italian seasoning, or chili flakes for a flavor twist.

    Want a crunchier top? Sprinkle with Parmesan or breadcrumbs before baking.
