    Cheesy Chicken Broccoli Potato Casserole 

     

    This cheesy chicken broccoli potato casserole is a creamy, hearty, and wholesome easy dinner recipe. Packed with tender potatoes, juicy chicken, nutritious broccoli, and melted cheese, it’s the perfect healthy comfort food casserole for weeknights or meal prep.

    Ingredients

    • 3 lbs red potatoes, cut into 1-inch pieces
    • 4 tablespoons butter, room temperature
    • 1 cup sour cream
    • ½–1 teaspoon kosher salt
    • ½ teaspoon freshly ground black pepper
    • ½ teaspoon garlic powder
    • ½ teaspoon paprika
    • 1 medium broccoli crown (about 2–3 cups florets)
    • 3 cups cooked chopped chicken
    • 2 cups shredded cheese (cheddar or blend), divided

    Instructions

    1. Preheat oven to 350°F (175°C). Lightly grease a 10-inch baking dish.
    2. Cook the potatoes: Place potatoes in a large pot, cover with water, and bring to a boil. Cook for 10–15 minutes until fork-tender. Drain and return to the pot.
    3. Prepare broccoli: Steam or roast broccoli until just tender but still slightly crisp. Drain well to remove excess moisture.
    4. Mash potatoes: Place the drained potatoes over very low heat briefly to remove excess water. Mash until smooth and fluffy. Add butter, sour cream, salt, pepper, garlic powder, and paprika. Mix until creamy.
    5. Combine: Stir in the cooked chicken, broccoli, and 1 cup of shredded cheese. Mix until evenly combined.
    6. Assemble: Transfer to the prepared baking dish and sprinkle remaining cheese on top.
    7. Bake: Bake for 20–25 minutes, until hot and bubbly with melted cheese. Serve warm.
