    • 2–3 Roma tomatoes, quartered

    Instructions

    1. Prepare the Tomato Base

    Place the Roma tomatoes, onion, garlic, and water or broth in a blender. Blend until completely smooth and set aside.

    2. Brown the Ground Beef

    In a large Dutch oven or soup pot, cook the ground beef over medium-high heat until fully browned. Break the meat apart as it cooks. Season lightly with salt and pepper, then drain excess fat and transfer the beef to a plate.

    3. Toast the Fideo Noodles

    Using the same pot, heat the olive oil over medium heat. Add the dry fideo pasta and stir constantly for 3–5 minutes until the noodles turn a deep golden brown. Be careful not to burn them.

    4. Cook the Tomato Mixture

    Pour the blended tomato mixture over the toasted noodles. Stir continuously and cook for 2–3 minutes until the sauce deepens in color and becomes fragrant.

    5. Build the Soup

    Return the browned beef to the pot. Add the diced potatoes, corn, and whole jalapeño pepper. Pour in 4 cups of broth and stir in the cumin.

    6. Simmer

    Bring the soup to a gentle boil, then reduce the heat to low. Cover and simmer for 10–15 minutes, or until the potatoes are tender and the noodles are soft. Add additional broth if a thinner consistency is desired.
