Looking for a flavor-packed, comforting Mexican soup? This Chicken Pozole Verde is a delicious traditional dish made with tender shredded chicken, roasted tomatillos, poblano peppers, and hearty hominy in a rich, zesty green broth. Perfect for chilly nights, Cinco de Mayo celebrations, or family dinners!

Ingredients for Green Chicken Pozole:

For the Pozole Verde:

2 lbs bone-in chicken thighs or breasts

1 ½ cups hominy (canned or soaked dried hominy)

1 medium onion, halved

4 garlic cloves, peeled

2–3 fresh tomatillos, husked and rinsed

2–3 poblano peppers

1 jalapeño (optional, for extra heat)

1 tsp ground cumin

1 tsp dried oregano (preferably Mexican oregano)

Salt and black pepper, to taste

8 cups chicken broth or water

1 tbsp vegetable oil (for roasting)

For Garnishes:

Chopped fresh cilantro

Thinly sliced radishes

Lime wedges

Sliced avocado (optional)

Crumbled tortilla chips or crispy tostadas (optional)

Instructions for Homemade Chicken Pozole Verde:

1. Cook the Chicken

In a large stockpot, combine the chicken, onion, garlic, and chicken broth. Bring to a boil, then reduce to a simmer.
Cook uncovered for 30–40 minutes, skimming any foam or impurities from the top.
Remove the chicken and set it aside to cool and shred. Discard onion and garlic, but keep the flavorful broth.

2. Roast the Green Vegetables

Preheat oven to 400°F (200°C). Place tomatillos, poblanos, and jalapeño on a baking sheet.
Drizzle with oil and roast for 15–20 minutes, until soft and slightly charred. Let cool, then peel and deseed peppers if desired.

3. Make the Green Pozole Sauce

In a blender, combine roasted tomatillos, poblano peppers, jalapeño (if using), cumin, oregano, and about 2 cups of the reserved broth.
Blend until smooth and vibrant green.

4. Simmer the Pozole Verde

Add the hominy to the remaining broth in the pot. Bring to a simmer and cook for 10 minutes.
Stir in the green sauce and shredded chicken. Season with salt and pepper to taste.
Simmer for 20–30 more minutes to deepen the flavor.

Serve Your Chicken Pozole Verde

Ladle the hot pozole into bowls and top with fresh cilantro, radish slices, and a squeeze of lime juice.
Add creamy avocado slices and crunchy tortilla chips or tostadas for extra texture and flavor.
