    • 1 cup shredded sharp cheddar cheese, divided

    • ½ teaspoon black pepper

    Instructions

    2. Wash and peel the potatoes if desired, then slice them into thin, even rounds about ⅛ inch thick.
    3. Thinly slice the onion.
    4. Arrange one-third of the potatoes in the bottom of the slow cooker.
    5. Top with one-third of the onion, then sprinkle with one-third of the salt, pepper, and cheddar cheese.
    6. Repeat the layers until all ingredients are used, finishing with cheese on top.
    7. Slowly pour the evaporated milk evenly over the layered potatoes.
    8. Cover and cook on HIGH for 3–4 hours or LOW for 6–7 hours, until the potatoes are fork-tender.
    9. Let the scalloped potatoes rest for 10–15 minutes before serving to allow the creamy sauce to thicken.
