    Crispy Low Carb Zucchini Fritter Patties

    Instructions

    Step 1: Prepare the Zucchini

    Shred the zucchini using a box grater. Place it in a colander and lightly sprinkle with salt. Let sit for 10 minutes to release excess moisture.

    Step 2: Remove Excess Water

    Squeeze the zucchini thoroughly using your hands or a clean kitchen towel. Removing as much liquid as possible helps create crispy fritters.

    Step 3: Mix the Ingredients

    Transfer the zucchini to a large bowl. Add eggs, shredded cheese, and almond flour. Mix until fully combined. If the mixture seems too wet, add a little more almond flour.

    Step 4: Season

    Add black pepper and additional salt if desired. Stir well.

    Step 5: Fry the Fritters

    Heat oil or butter in a large skillet over medium heat. Scoop approximately 1/4 cup of mixture for each fritter and gently flatten into patties.

    Cook for 3–4 minutes per side until golden brown and crispy. The cheese should be melted and the center fully cooked.

    Step 6: Serve and Enjoy

    Transfer to a paper towel-lined plate and serve immediately while hot and crispy.
