Ingredients:
¼ cup unsalted butter
1 cup diced yellow onion
1 cup diced celery
1 cup diced carrots
1 teaspoon minced garlic
¼ cup all-purpose flour
5 cups chicken broth
3 cups cooked chicken, diced (rotisserie works great!)
2 teaspoons chicken bouillon powder
1 teaspoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper, to taste
1½ cups uncooked Minute Rice
1 cup heavy whipping cream
Instructions:
In a large soup pot, melt the butter over medium heat. Add onion, celery, and carrots, and cook for 5–7 minutes until tender. Stir in garlic and cook for another minute until fragrant.
Sprinkle flour over the vegetables and stir until evenly coated. Cook for 2–3 minutes to form a smooth roux that will thicken your soup.
Gradually whisk in the chicken broth to prevent lumps. Bring to a gentle simmer.
Stir in diced chicken, bouillon powder, Italian seasoning, garlic powder, onion powder, salt, and pepper. Let simmer for 10 minutes so the flavors blend beautifully.
Stir in Minute Rice and continue to simmer for another 5 minutes, or until rice is soft and fluffy.
Lower the heat and stir in heavy whipping cream. Heat gently (don’t boil) until the soup reaches a silky consistency.
Adjust seasoning to taste and serve warm. Perfect with crusty bread or a fresh green salad!
