    Seafood Loaded Baked Potato with Creamy 3- Cheese Sauce

    Indulge in the ultimate comfort food with this Seafood Loaded Baked Potato topped with juicy shrimp, tender crawfish (or crab meat), and smothered in a rich 3- cheese Cajun cream sauce. Perfect for seafood lovers who crave a hearty, cheesy, and flavorful baked potato recipe!

    Ingredients:

    For the Baked Potato
    2 large Russet potatoes
    1 tbsp olive oil
    ½ tsp salt
    For the Seafood Filling
    ½ lb shrimp, peeled & deveined
    ½ cup crawfish tails (or lump crab meat)
    1 tsp Cajun seasoning
    ½ tsp garlic powder
    ½ tsp paprika
    2 tbsp butter
    1 tsp minced garlic
    ¼ cup green onions, chopped
    For the 3-Cheese Cajun Sauce
    1 tbsp butter
    1 tbsp flour
    1 cup heavy cream
    ¼ cup Parmesan cheese, shredded
    ¼ cup Cheddar cheese, shredded
    ¼ cup Monterey Jack cheese, shredded
    ½ tsp Cajun seasoning
    ½ tsp black pepper

    Instructions:

    Preheat oven to 400°F (200°C).

    Scrub potatoes clean, poke holes with a fork, rub with olive oil & salt.

    Bake for 50–60 minutes until tender.

    In a skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds.

    Toss in shrimp and crawfish, season with Cajun seasoning, garlic powder, and paprika.

    Cook 4–5 minutes until shrimp turn pink. Remove from heat.

    Melt butter in a saucepan over medium heat. Stir in flour and cook 1 minute.

    Slowly whisk in heavy cream until smooth.

    Add Parmesan, Cheddar, and Monterey Jack cheese. Stir until melted.

    Season with Cajun seasoning & black pepper. Keep warm.

    Slice open baked potatoes and fluff the insides with a fork.

    Pour cheese sauce inside.

    Top with cooked seafood and drizzle with more cheese sauce.

    Garnish with green onions & a sprinkle of paprika.

    Serve hot and enjoy the ultimate cheesy seafood baked potato!
