    Crockpot Potato Broccoli Cheddar Soup Recipe

    Warm up with this creamy crockpot broccoli cheddar potato soup loaded with tender broccoli, hearty potatoes, sweet carrots, and rich melted cheddar cheese. It’s the ultimate comfort food soup recipe that’s perfect for busy weeknights, chilly fall evenings, or cozy winter dinners.

     

    Ingredients:

    6 cups fresh broccoli florets (from 2 heads of broccoli)

    1 cup chopped onion

    1 cup shredded carrots

    2 oz. cream cheese

    1 tablespoon minced garlic

    ¼ teaspoon nutmeg

    ½ teaspoon kosher salt

    ¼ teaspoon black pepper

    ⅓ cup cornstarch (for thickening)

    4 cups chicken broth (or vegetable broth for vegetarian option)

    8 oz. shredded sharp cheddar cheese

    2 cups whole milk (or half-and-half for extra creaminess)

     

    Directions:

    1. Prepare the Vegetables

    Add broccoli florets, onion, and carrots into your crockpot or slow cooker.

    2. Add the Creamy Base

    Cut cream cheese into small chunks and add it in along with garlic, nutmeg, salt, and pepper.

    3. Stir in the Broth

    Pour in the chicken broth and mix everything together.

    4. Thicken the Soup

    Whisk cornstarch with a little water to make a slurry, then stir it into the crockpot.

    5. Slow Cook to Perfection

    Cook on LOW for 6–8 hours or HIGH for 3–4 hours until the vegetables are fork-tender.

    6. Finish with Cheese & Milk

    About 30 minutes before serving, stir in the shredded cheddar cheese and milk. Let it melt into a rich, creamy soup.

    7. Serve & Enjoy

    Ladle the soup into bowls, garnish with extra cheddar or fresh herbs, and enjoy your hearty potato broccoli cheddar soup!
