Cheesy Tortellini Pizza Casserole with Pepperoni & Veggies
This Cheesy Tortellini Pepperoni Pizza Casserole is the ultimate comfort food! Loaded with cheese-filled tortellini, savory pepperoni, and colorful vegetables, it’s all baked in a rich pizza sauce and topped with melty cheese. A perfect easy weeknight dinner the whole family will devour!
Ingredients:
1 package (9 oz) cheese tortellini (fresh or frozen)
1 jar (24 oz) pizza sauce
1 cup sliced pepperoni
1 small zucchini, diced or thinly sliced
1 cup chopped bell peppers (red, green, or yellow)
½ cup sliced black or green olives
2 cups shredded mozzarella cheese
1 cup Italian cheese blend (optional)
1 tsp Italian seasoning (optional)
½ tsp garlic powder (optional)
¼ tsp red pepper flakes (optional, for a spicy kick)
Fresh basil or parsley for garnish (optional)
Instructions:
1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.
2. In a large pot of boiling salted water, cook the cheese tortellini until al dente (follow package instructions). Drain and set aside.
3. In a large bowl, combine the cooked tortellini with pizza sauce, pepperoni slices, zucchini, bell peppers, olives, and half of the mozzarella. Add Italian seasoning, garlic powder, and red pepper flakes, if using. Mix everything until well coated.
4. Transfer the mixture to your prepared baking dish. Spread evenly. Top with the remaining mozzarella and Italian cheese blend.
5. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10–15 minutes until the cheese is melted and bubbly.
6. Let it cool slightly. Garnish with fresh basil or parsley. Serve warm and enjoy this cheesy pizza-style tortellini bake!
