1 lb ground beef
1 medium onion, diced
3 cloves garlic, minced
2 cups beef broth
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 tsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes (optional for heat)
1/2 tsp salt
1/4 tsp ground black pepper
8 oz lasagna noodles or mafalda pasta, broken into pieces (I like to use just 6 oz for a thicker soup)
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Directions:
1. In a large Dutch oven or soup pot, cook the ground beef over medium-high heat until browned. Drain any excess fat.
2. Add diced onions and minced garlic, sautéing for 2–3 minutes until fragrant and softened.
3. Stir in beef broth, diced tomatoes, tomato sauce, basil, oregano, red pepper flakes, salt, and black pepper. Bring to a boil, then reduce to a simmer for 10–15 minutes.
4. Add the broken lasagna noodles (or mafalda) and continue simmering until the pasta is tender, about 10–15 more minutes.
5. Lower the heat and stir in heavy cream, Parmesan, and mozzarella cheese. Mix well until the cheeses melt and the soup is creamy and thick.
