This Easy Enchilada Casserole is a beloved shortcut recipe passed down from Grandma perfect for busy nights when rolling individual enchiladas is just too much. It’s loaded with ground beef, melted cheese, soft corn tortillas, and zesty enchilada sauce baked to perfection and ready in under an hour!

 

Ingredients:

2 lbs ground beef (hamburger)

1 (28 oz) can enchilada sauce (we love El Pato)

2–3 cups shredded cheese (Mexican blend, cheddar, or your favorite)

1/2 cup diced onion

Corn tortillas

Taco seasoning (to taste)

Garlic powder (to taste)

Onion powder (to taste)

Salt & pepper (to taste)

Optional: chili powder for extra heat

 

Instructions:

1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain the fat and return the beef to the pan.

2. Add diced onions and cook on low heat until they soften.

3. Stir in taco seasoning and about 1/4 cup water. Mix until the meat is well-coated and simmer for a few minutes.

4. Meanwhile, pour the enchilada sauce into a small saucepan and warm it gently. Add garlic powder, onion powder, salt, pepper, and chili powder if you like extra spice.

5. Preheat oven to 350°F (175°C). Line a baking dish with foil for easy cleanup.

6. Spread a thin layer of enchilada sauce on the bottom of the dish.

7. Dip each corn tortilla in the sauce to coat both sides lightly (or brush the sauce on for less mess).

8. Layer the tortillas on the bottom of the dish, slightly overlapping to cover the base.

9. Add a layer of seasoned ground beef, sprinkle with cheese, and repeat with another layer of dipped tortillas. Continue layering until ingredients are used up.

10. Finish with a final layer of tortillas and plenty of shredded cheese on top. Make sure to seal the top fully to keep the casserole moist.

11. Cover with foil and bake for 15 minutes, then uncover and bake an additional 5 minutes until the cheese is bubbly and golden.

 

Tips & Serving Ideas:

Serve with sour cream, guacamole, or a side of Spanish rice.

Add black beans or chopped green chiles for extra flavor.
