    Slow Cooker Taco Tater Tot Casserole

     

    Slow Cooker Taco Tater Tot Casserole

     

    This Slow Cooker Taco Tater Tot Casserole is the perfect blend of crispy tater tots, seasoned ground beef, and gooey melted cheese. With bold taco flavors, it’s a family-friendly comfort food that’s ideal for weeknight dinners, potlucks, or game day. The slow cooker makes it incredibly easy just toss everything in and let it cook to perfection. Top it off with salsa, sour cream, and pickled jalapeños for a delicious Tex-Mex twist. It’s a cheesy, satisfying dish everyone will love!

    Ingredients:

    1 1/2 pounds ground beef

    1 medium onion, diced

    2 garlic cloves, minced

    1 packet (1 ounce) taco seasoning

    1 cup frozen corn

    2/3 cup salsa (use “hot” for extra kick)

    8 ounces Velveeta cheese, cubed

    2 cups shredded cheddar cheese

    32 ounces frozen tater tots

    Salt and pepper to taste

    Toppings: salsa, pickled jalapeños, sour cream, hot sauce

    Instructions:

    1. Brown the Beef: In a skillet, cook the ground beef and diced onion over medium heat. Add minced garlic when the beef is nearly cooked. Season with salt and pepper. Drain excess grease if necessary.

    2. Assemble in Slow Cooker: Transfer the beef mixture to a greased 6-quart slow cooker. Stir in taco seasoning, frozen corn, salsa, Velveeta cheese, and half of the shredded cheddar cheese. Mix well.

    3. Add Tater Tots: Season the frozen tater tots generously with salt and pepper, then add them to the slow cooker. Stir to combine.

    4. Cook: Cover and cook on LOW for 4-5 hours.

    5. Cheesy Finish: Sprinkle the remaining shredded cheddar cheese on top and cover for 5 minutes until melted.

    6. Serve: Garnish with your favorite toppings like sour cream, salsa, pickled jalapeños, and hot sauce for that extra Tex-Mex flavor.

    Recipe Notes:

    Make it spicy: Use “Hot” taco seasoning, “Hot” salsa, and top with Cholula Hot Sauce for a fiery twist.

    Don’t skip seasoning the tater tots! A good sprinkle of salt and pepper enhances their flavor.
