    Baked Salmon Meatballs with Creamy Avocado Sauce

     

    These Baked Salmon Meatballs with Creamy Avocado Sauce are a flavorful and healthy twist on traditional meatballs. Packed with protein-rich salmon, they’re perfect for a low-carb or gluten-free meal. The zesty avocado sauce adds a refreshing, creamy touch that complements the savory flavors. Ready in just 30 minutes, this dish makes for a quick and nutritious weeknight dinner. Ideal for seafood lovers looking for a light and satisfying meal!

    Ingredients:

    1 lb salmon fillet, skin removed and finely chopped

    1/2 cup breadcrumbs (gluten-free optional)

    1 egg, lightly beaten

    2 tbsp fresh parsley, chopped

    1 tsp garlic powder

    1/2 tsp paprika

    Salt and pepper to taste

    1 tbsp olive oil (for baking)

    For the Creamy Avocado Sauce:

    1 ripe avocado

    1/4 cup sour cream (or Greek yogurt for a lighter option)

    1 tbsp lemon juice

    1 clove garlic, minced

    Salt and pepper to taste

    Instructions:

    1. Preheat the oven to 375°F (190°C).

    2. In a large bowl, combine chopped salmon, breadcrumbs, egg, parsley, garlic powder, paprika, salt, and pepper. Mix everything until evenly incorporated.

    3. Form small meatballs from the mixture and place them on a greased baking sheet. Drizzle with olive oil for added moisture.

    4. Bake for 12-15 minutes or until the salmon meatballs are firm and golden, with an internal temperature of 145°F.

    5. While the meatballs bake, blend the avocado, sour cream, lemon juice, garlic, salt, and pepper in a blender or food processor until smooth and creamy.

    6. Serve the baked salmon meatballs with a generous drizzle of the avocado sauce and garnish with extra parsley if desired.
