    Ultimate Classic Meatloaf with Cheesy Mashed Potatoes

     

    This Ultimate Classic Meatloaf with Cheesy Mashed Potatoes is a hearty, comforting dish that brings back the flavors of traditional home-cooked meals. The juicy, flavorful meatloaf is perfectly complemented by creamy mashed potatoes, topped with melted cheddar cheese for an extra indulgent touch. Ideal for family dinners or gatherings, this recipe combines simplicity with deliciousness. The combination of savory beef, rich cheese, and buttery potatoes creates a meal that’s both satisfying and timeless. It’s a go-to recipe when you want to serve something that’s both comforting and crowd-pleasing.

    Ingredients:

    For the Meatloaf:

    – 2 pounds ground beef
    – 1 cup breadcrumbs
    – 1 onion, finely chopped
    – 2 cloves garlic, minced
    – 2 eggs
    – 1/2 cup milk
    – 2 tablespoons Worcestershire sauce
    – 1 tablespoon tomato paste
    – Salt and pepper, to taste
    – 1/2 cup ketchup
    – 1/2 cup grated cheddar cheese

    For the Cheesy Mashed Potatoes:

    – 2 pounds potatoes, peeled and quartered
    – 1/2 cup milk
    – 1/4 cup butter
    – Salt and pepper, to taste
    – 1/2 cup grated cheddar cheese for topping

    Directions:

    1. Preheat your oven to 375°F (190°C).

    2. In a large bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, tomato paste, salt, and pepper. Mix until the ingredients are well combined.

    3. Shape the mixture into a loaf and place it in a loaf pan. Evenly spread ketchup over the top.

    4. Bake for 1 hour or until the meatloaf is fully cooked. Remove from the oven, top with grated cheddar cheese, and return to the oven just until the cheese melts and becomes golden.

    5. While the meatloaf is baking, prepare the mashed potatoes. Boil the potatoes in a large pot of salted water until they are tender, about 20 minutes. Drain the potatoes thoroughly.

    6. Mash the potatoes with milk, butter, salt, and pepper until they are creamy and smooth.

    7. Serve the classic meatloaf with a generous helping of cheesy mashed potatoes, finishing with an extra sprinkle of grated cheddar on top.
