Zesty Mediterranean Lemon Chicken with Artichokes & Olives

Ingredients:
4 boneless, skinless chicken breasts
2 tablespoons extra virgin olive oil
Juice and zest of 1 fresh lemon
2 teaspoons dried oregano
1 teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 cup canned or jarred artichoke hearts, drained and chopped
½ cup Kalamata olives, pitted and sliced
¼ cup fresh Italian parsley, chopped
½ cup low-sodium chicken broth
1 tablespoon capers (optional, for extra briny flavor)
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat.
3. Season chicken breasts with oregano, garlic powder, salt, and pepper. Sear for 2–3 minutes on each side until golden brown.
4. Transfer seared chicken to a baking dish.
5. In a bowl, combine lemon juice, lemon zest, chicken broth, artichokes, olives, and capers (if using). Pour over the chicken.
6. Bake uncovered for 20–25 minutes or until chicken is cooked through and tender.
7. Garnish with fresh parsley before serving.
