    Ultimate Slow Cooker Frito Pie Recipe

     

    This Slow Cooker Frito Pie is the ultimate comfort food, combining hearty chili, crunchy Fritos, and gooey cheddar cheese. It’s an easy, one-pot Tex-Mex dish perfect for busy weeknights, game day parties, or potlucks. With bold flavors from taco seasoning, chilies, and a blend of beans, this recipe is sure to become a family favorite. Just set it in your slow cooker, and let the magic happen! Top with green onions and sour cream for the perfect finishing touch.

    Ingredients:

    1 lb ground beef

    1 medium onion, chopped

    2 cloves garlic, minced

    1 (15 oz) can diced tomatoes

    1 (15 oz) can tomato sauce

    1 (15 oz) can kidney beans, drained and rinsed

    1 (15 oz) can black beans, drained and rinsed

    1 (4 oz) can diced green chilies

    1 packet taco seasoning

    1 tsp chili powder

    1 tsp cumin

    Salt and pepper to taste

    4 cups Fritos corn chips

    2 cups shredded cheddar cheese

    Chopped green onions (optional)

    Sour cream (optional)

    Directions:

    1. Brown the Ground Beef
    Heat a large skillet over medium heat and cook the ground beef until fully browned. Drain any excess fat.

    2. Sauté the Aromatics
    Add the chopped onion and minced garlic to the skillet. Cook until the onion becomes translucent and fragrant.

    3. Combine Ingredients in the Slow Cooker
    Transfer the beef mixture to your slow cooker. Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, diced green chilies, taco seasoning, chili powder, cumin, salt, and pepper.

    4. Set It and Forget It
    Cook on low for 6-8 hours or high for 3-4 hours until the flavors meld beautifully.

    5. Assemble Your Frito Pie
    Just before serving, layer Fritos corn chips at the bottom of each bowl. Ladle the flavorful chili mixture over the chips.

    6. Add Toppings
    Sprinkle with shredded cheddar cheese and garnish with chopped green onions. Add a dollop of sour cream for the perfect finish.
