Thai Red Curry Noodle Soup with Shrimp

Ingredients:
3 cloves garlic, finely chopped
2 tbsp ginger paste
1 small jar red Thai curry paste (use more for extra spice)
1 can coconut milk
1 box chicken stock (or vegetable broth for vegetarian option)
2 tbsp soy sauce
2 tsp fish sauce
1 tbsp butter
1 tbsp honey
Juice of 1 lime
1 carrot, thinly sliced
1 cup broccoli florets
1 pack rice noodles
1 lb shrimp, peeled, deveined, lightly seasoned with salt & pepper
Toppings (Optional but Recommended):
Sesame seeds
Sliced red chili
Scallions (green onions)
Fresh cilantro
Chili oil crisp drizzle
Extra lime wedges
Instructions:
1. Sauté Aromatics In a large pot, heat a little oil and sauté garlic and ginger until fragrant.
2. Add Curry Paste Stir in red Thai curry paste and cook for 2–3 minutes to deepen the flavor.
3. Build the Broth Pour in coconut milk and chicken stock. Bring to a boil, then immediately reduce heat to simmer.
4. Season Stir in soy sauce, fish sauce, butter, honey, and lime juice. Let simmer for a few minutes.
5. Add Veggies & Noodles Toss in carrots, broccoli, and rice noodles. Cook until noodles are halfway done.
6. Cook Shrimp Add shrimp and simmer until they turn pink and the noodles are fully cooked.
7. Serve & Garnish Ladle soup into bowls and top with sesame seeds, chili slices, scallions, cilantro, chili oil, and a fresh squeeze of lime.
