Ingredients:

For the Thai Chicken Skewers:

1 lb chicken breast, cut into bite-sized cubes

1 tbsp olive oil

2 tbsp red Thai curry paste

1 tbsp soy sauce

1 tbsp honey

1 tsp ground ginger

2 cloves garlic, minced

1 tsp lime juice

Salt & black pepper to taste

For the Coconut Peanut Dipping Sauce:

1/2 cup creamy peanut butter

1/4 cup canned coconut milk

1 tbsp soy sauce

1 tbsp honey

1 tbsp lime juice

1 tsp red curry paste

1/2 tsp ground ginger

1/4 cup chopped fresh cilantro (for garnish)

 

Instructions:

1. Marinate the Chicken:
In a mixing bowl, whisk together olive oil, red curry paste, soy sauce, honey, ginger, garlic, lime juice, salt, and pepper. Toss in the chicken pieces, coat well, cover, and refrigerate for at least 30 minutes.

2. Grill the Skewers:
Preheat your grill or grill pan to medium-high heat. Thread marinated chicken onto skewers. Grill for 4–5 minutes on each side or until golden with grill marks and cooked through.

3. Make the Coconut Peanut Dip:
In a small bowl, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, red curry paste, and ground ginger until smooth and creamy.

4. Serve & Enjoy:
Plate your Thai curry chicken skewers with the coconut peanut dip on the side. Sprinkle with chopped cilantro for a fresh finish.
