    • 1/2 cup white chocolate chips
    • 1/4 cup sweetened condensed milk
    • 1/4 cup light corn syrup
    • 1 tsp unflavored gelatin powder
    • 1 drop pink gel food coloring

    Optional Garnish

    • Edible gold leaf
    • Fresh strawberry slices

    Step-by-Step Instructions

     Make the Strawberry Gelée Insert

    1. Combine strawberry purée, sugar, and lemon juice in a small saucepan.
    2. Sprinkle gelatin on top and let bloom for 5 minutes.
    3. Heat gently over low heat until gelatin dissolves (do not boil).
    4. Pour into small semi-sphere silicone molds.
    5. Freeze for at least 2 hours until firm.

     Prepare the Vanilla Mousse

    1. Sprinkle gelatin over 2 tablespoons of sparkling grape juice; let bloom.

    3. Stir in bloomed gelatin and vanilla extract until dissolved.
    4. Cool to room temperature.
    5. Whip heavy cream to stiff peaks and gently fold into the cooled custard mixture.

    1. Fill silicone dome or diamond molds halfway with mousse.

    1. Place frozen domes on a wire rack over a tray.

    3. Allow excess glaze to drip off.
    4. Refrigerate for 1 hour to thaw before serving.
