Roasted Tomatillo Chicken Soup

Ingredients:
For the Soup Base:
1 lb (450 g) tomatillos, husked and rinsed
1 medium onion, quartered
2 cloves garlic, peeled
1–2 jalapeños, stemmed and halved (adjust spice level)
1 tbsp olive oil (for roasting)
For the Chicken & Broth:
1 lb (450 g) boneless, skinless chicken breasts
5 cups (1.2 L) chicken broth
1 cup (240 ml) water
For Flavor & Finish:
1 medium zucchini, diced
½ cup (15 g) fresh cilantro, chopped (plus extra for garnish)
1 tsp ground cumin
½ tsp dried oregano
Salt and black pepper, to taste
1 lime, cut into wedges (for serving)
Instructions:
Preheat oven to 425°F (220°C). On a lined baking sheet, spread tomatillos, onion, garlic, and jalapeños. Drizzle with olive oil and toss evenly.
Roast for 20–25 minutes, until softened and slightly charred for that smoky depth of flavor.
While veggies roast, season chicken with salt and pepper.
In a large pot, bring chicken broth and water to a simmer. Add chicken breasts, cover, and poach for 15–20 minutes, or until fully cooked.
Remove, shred with two forks, and set aside.
Once roasted, let veggies cool slightly. Transfer to a blender, including all pan juices.
Add half of the chopped cilantro and blend until smooth this will form your vibrant tomatillo base.
Pour the tomatillo blend into the pot with chicken broth. Add shredded chicken, zucchini, cumin, oregano, and remaining cilantro.
Simmer for 10–15 minutes so flavors meld beautifully.
Season with salt and pepper to taste.
Ladle into bowls and top with fresh cilantro.
Squeeze a wedge of lime over each serving for a zesty, tangy finish.
