    Roasted Garlic Cauliflower and Mushrooms Recipe

     

    This Garlic Cauliflower and Mushrooms recipe is a simple, healthy, and delicious side dish perfect for any meal! Roasted with garlic and olive oil, the cauliflower and mushrooms develop a rich, golden flavor. It’s low in calories yet packed with nutrients, making it ideal for keto, low-carb, or clean-eating diets. With a sprinkle of fresh parsley and a hint of paprika, these veggies are both vibrant and flavorful. Add a squeeze of lemon juice for a bright finish that pairs well with any main dish!

    Ingredients:

    1 medium cauliflower, cut into florets

    8 oz mushrooms, sliced

    3 tbsp olive oil

    4 cloves garlic, minced

    Salt and pepper to taste

    1 tbsp fresh parsley, chopped (for garnish)

    ½ tsp paprika (optional, for extra flavor)

    Instructions:

    1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    2. In a large bowl, toss the cauliflower florets and mushrooms with olive oil, minced garlic, salt, and pepper.

    3. Spread the veggies evenly on the prepared baking sheet.

    4. Roast for 25-30 minutes, stirring halfway through, until the cauliflower and mushrooms are tender and golden brown.

    5. Sprinkle with fresh parsley and a dash of paprika (if desired) before serving.

    Notes:

    For an added burst of flavor, squeeze a little lemon juice over the roasted veggies just before serving!
