Roasted Baby Potatoes with Baked Feta & Herbs

Looking for an easy and flavorful side dish? These Baked Feta Potatoes are crispy on the outside, creamy inside, and loaded with Mediterranean flavor. Perfect for weeknight dinners, holiday spreads, or healthy meal prep!

 

Ingredients:

1 lb baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and black pepper, to taste

5 oz block of feta cheese

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions:

1. Preheat oven to 400°F (200°C).

2. In a large bowl, toss halved baby potatoes with olive oil, garlic powder, oregano, salt, and pepper until well coated.

3. Spread potatoes on a baking sheet in a single layer. Place the block of feta in the center.

4. Bake for 30–35 minutes, until potatoes are golden and tender, and feta is soft and lightly browned.

5. Remove from oven. Drizzle with lemon juice and gently mash the feta to mix it into some of the potatoes.

6. Garnish with chopped fresh parsley and serve warm.
