    Recipe Details:

    – Servings: 6
    – Prep Time: 5 minutes
    – Cook Time: 30 minutes
    – Total Time: 35 minutes

    Ingredients:

    – 1 (20 oz) can crushed pineapple (with juice)
    – ½ cup granulated sugar
    – ½ cup all-purpose flour
    – ½ teaspoon ground cinnamon (optional)
    – 2 large eggs, beaten
    – 1 cup grated cheddar cheese
    – 1 sleeve (about 30) Ritz crackers, crushed
    – ¼ cup unsalted butter, melted

    Instructions:

    1. Preheat the oven: Set to 350°F (175°C). Lightly grease a 9×9-inch baking dish.
    2. Make the filling: In a large bowl, combine crushed pineapple (with juice), sugar, flour, cinnamon (if using), eggs, and cheddar cheese. Stir until well mixed.
    3. Transfer to dish: Pour the mixture into the prepared baking dish.
    4. Add the topping: In a separate bowl, mix crushed Ritz crackers with melted butter. Sprinkle evenly over the pineapple mixture.
    5. Bake: Place in the oven for 25–30 minutes, until the top is golden brown and the casserole is bubbly.
    6. Serve: Let cool slightly and enjoy warm as a side dish or sweet treat.
