    Hearty Lamb Stew with White Beans

    Hearty Lamb Stew with White Beans

    Craving a warm, protein-packed comfort meal? This Hearty Lamb Stew with White Beans is a soul-soothing dish that combines tender chunks of lamb with fiber-rich beans and savory herbs. Perfect for chilly nights or cozy Sunday dinners!

     

    Ingredients:

    1 lb (450g) lamb shoulder or stew meat, cut into cubes

    1 tablespoon olive oil

    1 medium onion, chopped

    2 cloves garlic, minced

    1 cup carrots, sliced

    1 cup celery, chopped

    1 bay leaf

    1 teaspoon dried thyme

    1 teaspoon dried rosemary

    2 cups beef or vegetable broth

    1 can (15 oz) white beans, drained and rinsed (or any beans of choice)

    Salt and black pepper to taste

     

    Instructions:

    1. Brown the Lamb
    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add lamb cubes and sear until browned on all sides (about 5–7 minutes). Remove and set aside.

    2. Sauté Aromatics & Veggies
    In the same pot, add onions, garlic, carrots, and celery. Cook for 4–5 minutes until softened and fragrant.

    3. Simmer to Perfection
    Return the browned lamb to the pot. Stir in the bay leaf, thyme, rosemary, and broth. Bring to a boil, then reduce to low heat, cover, and simmer for 45 minutes to 1 hour until the lamb becomes tender.

    4. Add the Beans
    Stir in the white beans and simmer uncovered for an additional 15–20 minutes, letting the flavors marry.

    5. Final Touch
    Remove the bay leaf. Season with salt and pepper to taste. Serve hot with crusty bread or spooned over fluffy rice.

    Total Time: 1 hour 30 minutes
