Hearty Ground Beef and Potato Casserole
Ingredients:
– 4-5 potatoes, peeled and thinly sliced
– Drizzle of olive oil
– Salt and pepper to taste
– 1/2 tsp sweet paprika
– 450 g (1 lb) ground beef
– 1 onion, finely chopped
– 1/2 tsp sweet paprika
– 1/2 tsp dried oregano
– 9 oz crushed tomatoes
– Optional: shredded mozzarella cheese
Directions:
1. Preheat your oven to 375°F (190°C).
2. Arrange the sliced potatoes in a greased baking dish. Drizzle with olive oil and season with salt, pepper, and 1/2 tsp sweet paprika.
3. Bake the potatoes for about 20 minutes until they start to soften.
4. In a skillet over medium heat, cook the chopped onions and ground beef with salt, pepper, 1/2 tsp sweet paprika, and dried oregano until the beef is browned.
5. Stir in the crushed tomatoes and simmer the mixture for 10 minutes.
6. Spoon the beef mixture over the pre-baked potatoes in the baking dish. Optionally, sprinkle shredded mozzarella cheese on top.
7. Bake the casserole for an additional 15-20 minutes until the cheese is bubbly and golden.
8. Serve the casserole hot from the oven.
