Ingredients:

To Slow Cook:

600 g Lamb steak, cubed (perfectly tender for slow cooking!)

1 Onion, diced (fresh or frozen works!)

2 Garlic cloves, crushed

2 x 400 g Tinned tomatoes

2 Lamb stock cubes (no need to dissolve)

3 tsp Dried oregano

2 tsp Dried thyme

1 tsp Fennel seeds

1 tsp Ground cumin

Sea salt and freshly ground black pepper

To Add Later:

400 g Dried orzo (or your favorite pasta!)

3 Red peppers, sliced

100 ml Boiling water

To Serve:

1 Lemon, juice

100 g Feta, crumbled

10 g Fresh mint, finely chopped

Instructions:

1. Prep the Slow Cooker: Heat the slow cooker to medium.

2. Layer the Ingredients: Add the cubed lamb, onion, garlic, tinned tomatoes, stock cubes, oregano, thyme, fennel seeds, cumin, salt, and pepper to the slow cooker. Stir everything together.

3. Cook the Base: Cover with the lid and cook for 3.5-4.5 hours on HIGH or 6-8 hours on LOW until the lamb becomes tender.

4. Add Orzo & Veggies: Stir in the dried orzo, sliced red peppers, and boiling water. Continue cooking for another 45 minutes or until the orzo is cooked through.

5. Finish with Freshness: Once done, squeeze lemon juice over the stew, sprinkle with crumbled feta, and garnish with fresh mint.

6. Serve & Enjoy: Serve warm and enjoy the rich Mediterranean flavors!
