Charred corn kernels are mixed with a creamy, tangy sauce made from mayonnaise, sour cream, lime juice, and spices like chili powder and smoked paprika.     Ingredients:

    4 cups corn kernels (fresh or frozen)

    1 tablespoon olive oil

    1/2 cup mayonnaise

    1/2 cup sour cream

    1 cup crumbled Cotija cheese (or feta cheese)

    1 tablespoon lime juice (juice from 1 lime)

    1 teaspoon chili powder

    1/2 teaspoon smoked paprika

    1/4 teaspoon garlic powder

    1/4 teaspoon cayenne pepper (optional for extra spice)

    Directions:
