Crispy Chicken Coleslaw Egg Rolls

Ingredients:
10–12 egg roll wrappers
2 cups shredded cooked chicken (rotisserie chicken works best)
3 cups tri-color coleslaw mix (cabbage, carrots, red cabbage)
1 tbsp olive oil
Salt & pepper, to taste
Vegetable oil, for frying
Small bowl of water (for sealing wrappers)
Directions:
1. Prepare the Filling Heat olive oil in a large skillet over medium heat. Add coleslaw mix and sauté for 3–4 minutes until just tender.
2. Stir in the shredded chicken and cook for another 2–3 minutes. Season lightly with salt and pepper. Remove from heat and let the filling cool slightly.
3. Assemble the Egg Rolls Lay one egg roll wrapper flat in a diamond shape. Add ¼ to ⅓ cup of filling across the center. Fold in the sides, roll tightly from the bottom, and seal the edge with water.
4. Fry Until Golden Heat about ¾ inch of vegetable oil in a skillet (350–375°F). Fry egg rolls in small batches until crispy and golden brown on all sides.
5. Drain on paper towels and serve hot with your favorite dipping sauces like sweet chili, soy sauce, or spicy sriracha mayo.
