    Creamy Parmesan Italian Sausage Soup

     

    Creamy Parmesan Italian Sausage Soup
    This rich and comforting Italian sausage soup combines savory Italian sausage, Parmesan cheese, and fresh spinach in a creamy, delicious broth. It’s the perfect meal for a cozy dinner or a hearty lunch!

    Ingredients:

    1 pound Italian sausage (crumbled)

    1 tablespoon olive oil

    1 onion (diced)

    3 cloves garlic (minced)

    4 cups chicken broth

    1 can (14.5 oz) diced tomatoes

    2 cups spinach (chopped)

    1 cup heavy cream

    ½ cup Parmesan cheese (grated)

    1 teaspoon Italian seasoning

    ½ teaspoon crushed red pepper flakes (optional)

    Salt and pepper to taste

    Instructions:

    1. Heat olive oil in a large pot over medium heat. Add crumbled Italian sausage and cook until browned, about 5-7 minutes. Remove and set aside.

    2. In the same pot, cook the diced onion and minced garlic until soft and translucent, about 2-3 minutes.

    3. Pour in the chicken broth and diced tomatoes, then bring to a simmer.

    4. Stir in the cooked sausage, Italian seasoning, crushed red pepper flakes, salt, and pepper. Let it simmer for about 10 minutes to blend the flavors.

    5. Add the chopped spinach and cook for an additional 2-3 minutes until wilted.

    6. Lower the heat to low. Gradually stir in the heavy cream and Parmesan cheese, cooking for 2-3 minutes until the soup becomes creamy and smooth.

    7. Serve hot with extra Parmesan cheese on top, if desired.

     

    Notes:

    For a lighter version, substitute Italian sausage with turkey or chicken sausage.

    To avoid curdling, temper the heavy cream by adding some of the hot broth before mixing it into the soup.

    Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat over low heat, adding a splash of chicken broth if needed.
