    Creamy Cajun Mozzarella Chicken Penne Pasta

    Looking for a bold and creamy chicken pasta recipe that’s packed with cheesy goodness and a spicy Cajun kick? This Mozzarella Chicken Penne with Garlic Cajun Sauce is the ultimate comfort food dinner! Perfect for busy weeknights or weekend indulgence, this creamy pasta with Cajun-spiced chicken is a guaranteed crowd-pleaser.

     

    Ingredients:

    For the Cajun Chicken:

    1½ lbs boneless, skinless chicken breasts (cut into thick strips)

    2 tbsp olive oil

    2 tbsp unsalted butter

    1½ tsp Cajun seasoning

    1 tsp garlic powder

    Salt & black pepper, to taste

    For the Pasta & Sauce:

    12 oz penne pasta

    2 tbsp unsalted butter

    4 garlic cloves, minced

    1½ cups heavy cream

    ½ cup whole milk

    6 oz Velveeta cheese, cubed

    1 cup shredded mozzarella cheese

    ¾ cup grated Parmesan cheese

    ½ tsp Cajun seasoning

    Salt & pepper, to taste

    Fresh chopped parsley (for garnish)

     

    Instructions:

    1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook penne pasta until al dente (about 10–11 minutes). Drain and reserve ½ cup of the pasta water.

    2. Sear the Cajun Chicken:
    Heat olive oil and 2 tbsp butter in a skillet over medium-high heat. Add chicken strips and season with Cajun seasoning, garlic powder, salt, and pepper.
    Sauté for 8–10 minutes, turning occasionally, until the chicken is golden brown, tender, and cooked through. Remove and set aside.

    3. Make the Creamy Garlic Cajun Sauce:
    In the same skillet, melt 2 more tbsp of butter. Add the minced garlic and cook for 1 minute until fragrant.
    Stir in heavy cream and whole milk. Add Velveeta cubes and whisk until melted and smooth.

    4. Add Cheeses & Seasoning:
    Mix in mozzarella and Parmesan cheeses. Stir until the sauce is thick and creamy. Season with ½ tsp Cajun seasoning, plus salt and pepper to taste.

    5. Combine Pasta & Sauce:
    Add cooked penne to the creamy sauce. Gently toss to coat. If the sauce is too thick, stir in a splash of reserved pasta water.

    6. Serve:
    Plate the pasta and top with Cajun chicken strips. Garnish with fresh parsley and serve hot!
