Ingredients:
• 3 cups chopped broccoli (fresh or frozen)
• 1 cup shredded carrots
• ½ cup diced yellow onion
• 4 cups chicken broth
• 2 cups heavy whipping cream
• 4 tbsp butter
• 1 tsp olive oil
• ¼ cup all-purpose flour
• 3 cups shredded cheddar cheese (sharp cheddar melts best!)
• 1 tsp chicken bouillon powder
• 1 tsp onion powder
• 1 tsp garlic powder
• Salt & black pepper, to taste
Directions:
Heat olive oil and 2 tbsp butter in a large pot over medium heat. Add diced onion and cook until soft and translucent (3–4 minutes).
Add broccoli and shredded carrots; cook 5 minutes until slightly tender.
Sprinkle flour over the vegetables and stir well. Cook for 1–2 minutes to eliminate raw flour flavor.
Slowly pour in chicken broth while stirring. Bring to a simmer and cook for 10 minutes, until broccoli is completely tender.
Reduce heat to low. Add heavy cream, remaining butter, bouillon, onion powder, garlic powder, salt, and pepper. Warm gently without boiling.
Stir in shredded cheddar cheese a little at a time until fully melted and velvety smooth.
Taste and adjust seasoning if needed.
Ladle into bowls and top with extra cheddar or crunchy croutons. Perfect with crusty bread!
