    Classic Southern Biscuits & Sausage Gravy

    Ingredients:

    Flaky Buttermilk Biscuits
    2 cups all-purpose flour
    1 tablespoon baking powder
    ½ teaspoon baking soda
    1 teaspoon salt
    6 tablespoons cold butter, cubed
    ¾ cup cold buttermilk

    Creamy Sausage Gravy
    1 pound breakfast sausage
    ¼ cup all-purpose flour
    2½–3 cups whole milk
    Salt and black pepper, to taste

    Instructions:

    Make the Biscuits
    Preheat oven to 425°F (220°C).
    In a large bowl, whisk together flour, baking powder, baking soda, and salt.
    Cut in cold butter until the mixture resembles coarse crumbs.
    Add buttermilk and gently stir just until a soft dough forms.
    Turn dough onto a floured surface, knead lightly, and pat to 1-inch thickness.
    Cut biscuits and place on a baking sheet.
    Bake 12–15 minutes, until fluffy and golden brown.
    Make the Sausage Gravy
    While biscuits bake, cook sausage in a skillet over medium heat, breaking it apart as it browns. Do not drain the fat.
    Sprinkle flour over sausage and stir, cooking 1–2 minutes to remove raw flour taste.
    Slowly add milk, stirring constantly until smooth.
    Simmer until thick and creamy. Season with salt and plenty of black pepper.
    Serve
    Split warm biscuits in half and smother generously with sausage gravy. Serve hot and enjoy!
