    Looking for an easy weeknight dinner idea that’s both comforting and packed with flavor? This Cheesy Stuffed Pepper Casserole is a one-pan wonder made with savory ground beef, colorful bell peppers, and gooey melted cheddar cheese. It’s the perfect twist on classic stuffed peppers no stuffing required!

    Ingredients:

    1 pound lean ground beef

    1 medium onion, diced

    1 green bell pepper, diced

    1 red bell pepper, diced

    1 can (14.5 oz) diced tomatoes (with juice)

    1 cup cooked white rice

    1 cup shredded sharp cheddar cheese

    1 teaspoon garlic powder

    Salt and freshly ground black pepper, to taste

    Instructions:

    1. Preheat your oven to 350°F and lightly grease a 9×13-inch casserole dish.

    2. In a large skillet, cook the ground beef over medium heat until fully browned. Drain off any excess grease.

    3. Add the diced onion, green bell pepper, and red bell pepper to the skillet. Cook for about 5–7 minutes or until vegetables are soft.

    4. Stir in the diced tomatoes, cooked rice, garlic powder, salt, and pepper. Let the mixture simmer for 5 more minutes, allowing flavors to blend.

    5. Transfer the beef and pepper mixture into the prepared baking dish. Sprinkle shredded cheddar cheese evenly over the top.

    6. Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly.

    7. Let it rest for 5 minutes before serving.

     

    Serving Suggestion: Garnish with chopped parsley or green onions for extra flavor and color.
