Cheesy Chicken & Mushroom Quiche Recipe
This delicious Chicken Mushroom Quiche combines juicy chicken, savory mushrooms, caramelized onions, and melty cheese in a buttery crust. Ideal for quick family dinners, meal prep, or a cozy weekend brunch.

Ingredients (Serves 6):
1 shortcrust pastry (or puff pastry)
300g cooked chicken breast or leftover roast chicken, diced
250g button mushrooms, sliced
1 onion, thinly sliced
3 large eggs
200ml double cream (or 250ml single cream)
100ml milk
100g grated cheese (Emmental, Comté, or Cheddar)
1 tbsp olive oil or butter
Salt, black pepper, nutmeg
Chopped parsley or chives (optional)
Instructions:
Heat oil or butter in a pan.
Sauté the onions until soft and translucent.
Add the mushrooms and cook until their moisture evaporates and they become golden.
Stir in the diced chicken and cook for 2–3 minutes.
Season with salt, pepper, and a pinch of nutmeg. Set aside.
In a mixing bowl, whisk together the eggs, cream, and milk.
Add grated cheese, salt, pepper, and fresh herbs if using.
Preheat oven to 180°C / 350°F.
Line your tart tin with the pastry and poke the base with a fork.
Spread the chicken-mushroom mixture evenly over the crust.
Pour the egg-cream mixture over the top.
Bake for 35–40 minutes, until golden brown and fully set.
Allow to cool slightly before slicing.
