Ingredients:

100g almonds

75g walnuts

75g dried cranberries

125g sugar

125g honey

1 egg white

Step-by-Step Instructions

1. Prepare the Almonds:

Place almonds in a small pot and cover with hot water. Boil for 3 minutes.

Drain the almonds and transfer them to a bowl. Peel off the skins and set them aside.

Toast the peeled almonds in a pan over low-medium heat for 5-8 minutes, stirring frequently. Be careful not to overcook.

2. Toast the Walnuts:

Toast the walnuts in a pan over low-medium heat for 5 minutes, stirring occasionally. Combine the toasted almonds and walnuts in a bowl and let them cool.

3. Prepare the Syrup:

In a small pot, heat the sugar and honey over medium heat, stirring constantly until fully melted and bubbling. The mixture should reach 120°C–130°C (248°F–266°F) using a candy thermometer, or test by dropping it into cold water until it forms a solid ball. Remove from heat and let cool for 3 minutes.

4. Whisk the Egg White:

Beat the egg white in a large bowl until stiff peaks form using an electric mixer.

5. Combine Egg White and Syrup:

Slowly pour the syrup into the beaten egg white while stirring with a spatula. Switch to a whisk and mix until fully incorporated.

Return the mixture to low heat and stir continuously for 8-10 minutes until thick and shiny.

6. Add Nuts and Cranberries:

Mix the toasted almonds, walnuts, and cranberries into the nougat until evenly distributed.

7. Mold the Nougat:

Grease a mold with oil and dust it with icing sugar. Pour the nougat mixture into the mold and spread it evenly with a spatula.

8. Cool and Slice:

Allow the nougat to cool at room temperature for several hours until it hardens. Remove it from the mold, place it on a cutting board, and slice it into rectangular bars.

Tips for Perfect Nougat:

Use high-quality honey for the best flavor. Floral, fruity, or earthy varieties add depth.

Roast the nuts to enhance their flavor and aroma.

Let the nougat fully harden before cutting for cleaner slices.

Store in an airtight container at room temperature or refrigerate for longer freshness.
