    Delicious Corn Fritters Recipe

     

     

    Ingredients:

     

    – 1 cup corn kernels (fresh or canned)
    – 1/2 cup all-purpose flour
    – 1/4 cup cornmeal
    – 1 teaspoon baking powder
    – 1/2 teaspoon salt
    – 1/4 teaspoon black pepper
    – 1/4 cup milk
    – 1 egg, beaten
    – 1/4 cup finely chopped green onions
    – 1/4 cup grated cheddar cheese
    – 1 tablespoon sugar (optional)
    – Oil for frying

    Directions:

     

    1. Prepare the Batter: In a large bowl, combine 1 cup corn kernels, 1/2 cup all-purpose flour, 1/4 cup cornmeal, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
    2. Mix Wet Ingredients: In a separate bowl, whisk together 1/4 cup milk and 1 beaten egg. Add this mixture to the dry ingredients and stir until just combined.

    3. Add Flavorings: Fold in 1/4 cup finely chopped green onions and 1/4 cup grated cheddar cheese. If you prefer a touch of sweetness, add 1 tablespoon sugar.
    4. Heat the Oil: Heat oil in a large skillet over medium heat until hot but not smoking.
    5. **Fry the Fritters**: Drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon. Fry until golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
    6. Serve: Serve the corn fritters hot, perfect for an appetizer or snack. Enjoy them with your favorite dipping sauce.
