    Ultimate Cheesy Beef Empanadas

     

    “Ultimate Cheesy Beef Empanadas: A Flavorful Fiesta in Every Bite!”

    Craving a mouthwatering treat that’ll make your taste buds sing? Try our irresistible Cheesy Beef Empanadas recipe, perfect for any occasion or when you need a satisfying snack that hits all the right notes!

    Ingredients:
    – 2 tablespoons olive oil
    – 1 small white onion (diced)
    – 1 jalapeño (deseeded and diced (optional))
    – 2 garlic cloves (minced)
    – 1 lb ground beef
    – 1 teaspoon salt
    – 1 teaspoon ground black pepper
    – 1 teaspoon cumin powder
    – 1 teaspoon ground dried oregano
    – 12-15 6-inch round empanada wrappers*
    – 8 oz Colby jack cheese (freshly grated)
    – 1 egg
    – 2 tablespoons water

     

    Instructions:
    1. Preheat your oven to 375°F and prepare two large baking sheets with parchment paper, silicone baking mats, or non-stick spray for easy cleanup.
    2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent. Then, add jalapeño (if using) and continue cooking for three more minutes. Add minced garlic and cook until fragrant.

     

    3. Add ground beef to the skillet and season with salt, pepper, cumin powder, and dried oregano. Cook until the beef is browned and cooked through. Drain excess fat and let it cool for 10 minutes.
    4. Once cooled, spoon a portion of the beef mixture onto the center of each empanada wrapper. Top with a generous tablespoon of freshly grated Colby jack cheese.
    5. Fold the empanada wrapper in half, sealing the edges by pinching or pressing with a fork to create a decorative border.

     

    6. Arrange the assembled empanadas on the prepared baking sheets, leaving space between each for even baking. Beat the egg and water together in a small bowl, then brush the mixture over the empanadas.
    7. Bake in the preheated oven for 25 to 27 minutes or until the empanadas are golden brown and lightly crispy on top.
    8. Remove from the oven and let them cool for 10 minutes before serving. Enjoy the cheesy, beefy goodness of these delectable empanadas!
