Ingredients:
– 1 pound chicken breasts or tenders
– 1 can (14.5 oz) Italian-style diced tomatoes
– 4 tablespoons butter
– 4 cloves garlic, minced
– 1 cup shredded whole milk mozzarella cheese
– Salt and pepper to taste
– 1/2 teaspoon Italian seasoning (optional)
Instructions:
1. Preheat and Prep: Heat your oven to 400°F (200°C). While it heats up, melt butter in a saucepan over medium heat. Add minced garlic, sauté until fragrant, about 2-3 minutes.
2. Assemble: Pour the Italian-style diced tomatoes into a baking dish. Season chicken with salt and pepper, then place it into the dish with the tomatoes.
3. Infuse Flavor:Drizzle the melted garlic butter over the chicken for extra flavor.
4. Bake:Put the baking dish in the preheated oven. Bake for 15-20 minutes until the chicken is fully cooked.
5. Melt Cheese: Once chicken is cooked, sprinkle mozzarella cheese evenly over the top. Switch the oven to broil and return the dish. Broil for a few minutes until the cheese is melted and golden brown.
