Slow Cooker Cheesy Bratwurst Pasta Packets

These Slow Cooker Cheesy Bratwurst Pasta Packets turn just four simple ingredients into a fun, comforting family dinner. Tender pasta, savory bratwurst, melted cheese, and buttery goodness are sealed inside individual foil packets, then cooked slowly until everything is hot, tender, and delicious.

Perfect for easy weeknight dinners, summer gatherings, backyard parties, and family meals, these individual foil packets also make cleanup incredibly simple. Everyone gets their own cheesy pasta packet to open at the table!

    Why You’ll Love This Recipe

    • Only 4 main ingredients — simple and budget-friendly.
    • Easy slow cooker dinner — let the slow cooker do most of the work.
    • Minimal cleanup — individual foil packets keep the mess contained.
    • Family-friendly — customize each packet with different cheese or bratwurst.
    • Perfect for gatherings — individual servings make this recipe fun to serve.
    • Comfort food made easy — buttery pasta, savory sausage, and gooey melted cheese in every bite.

    Ingredients

    • 1 pound uncooked bratwurst sausages, sliced into ½-inch rounds
    • 3 cups dry short pasta, such as rotini, penne, or shells
    • 2 cups shredded cheese, such as cheddar or Colby Jack
    • ½ cup salted butter, melted, plus extra for greasing the foil if desired

How to Make Slow Cooker Bratwurst Pasta Packets

    1. Par-Cook the Pasta

Cook the pasta in salted boiling water for approximately half of the package cooking time. The pasta should still be quite firm. Drain thoroughly.

    2. Prepare the Bratwurst

Slice the bratwurst into ½-inch rounds. For extra flavor, you can lightly brown the sausage in a skillet for 3–4 minutes before assembling the packets.

    3. Combine the Pasta and Sausage

Add the par-cooked pasta and sliced bratwurst to a large bowl. Toss gently until evenly distributed.

    4. Assemble the Foil Packets

Place six large sheets of heavy-duty aluminum foil on your work surface. Add approximately 1 cup of the pasta and bratwurst mixture to the center of each sheet.

Top each portion with about ⅓ cup shredded cheese and drizzle with approximately 1 tablespoon melted butter.

    5. Seal the Packets

Fold the long sides of the foil over the filling and seal them securely. Fold in the short ends to create six individual packets, leaving a little room inside for steam.

    6. Slow Cook

Arrange the foil packets inside the slow cooker, stacking them carefully without crushing them.

    Cover and cook:

    • LOW: 3–4 hours
    • HIGH: 1½–2 hours

The pasta should be tender, the bratwurst fully cooked, and the cheese melted and gooey.

    7. Serve

Carefully remove the packets using tongs. Open them cautiously because hot steam will escape. Stir the cheesy pasta gently before serving.

    Recipe Tips

For even more flavor, try using smoked or strongly seasoned bratwurst and sharp cheddar cheese. Mozzarella creates a stretchy, cheesy texture, while pepper Jack adds a little heat.

You can also make each packet slightly different. Add your favorite seasonings, vegetables, or cheese combinations to individual portions so everyone gets exactly what they like.

For a complete meal, serve these cheesy bratwurst foil packets with a crisp green salad, steamed broccoli, buttered peas, corn on the cob, coleslaw, or crusty garlic bread.

    Food Safety Tips

Keep raw bratwurst refrigerated until ready to use and wash your hands, utensils, and cutting board after handling raw sausage.

For food safety, verify that the bratwurst reaches 160°F (71°C) internally. If you are uncertain about the cooking time, browning the sausage first is a good extra precaution.

Avoid leaving the finished packets in the slow cooker on the warm setting for extended periods. Refrigerate leftovers promptly and reheat them thoroughly before serving.
