    Slow Cooker Herb Ranch Red Potatoes

    Ingredients

    • 2 1/2 lbs petite red potatoes, scrubbed and halved
    • 1 cup buttermilk ranch dressing
    • 1/2 cup low-sodium chicken broth
    • 4 tbsp unsalted butter
    • 2 cloves garlic, minced
    • 2 tbsp fresh parsley, chopped (plus extra for garnish)
    • 1 tsp dried oregano
    • 1/2 tsp salt (adjust to taste)
    • 1/4 tsp black pepper

    Instructions

    1. Place the halved red potatoes in your slow cooker and spread evenly.
    2. In a small pan, melt the butter over low heat. Add garlic and cook for 1 minute until fragrant.
    3. Remove from heat and whisk in ranch dressing, chicken broth, parsley, oregano, salt, and pepper.
    4. Pour the creamy herb ranch mixture evenly over the potatoes.
    5. Cover and cook:
      • LOW for 4–5 hours
      • HIGH for 2–3 hours
