    High-Protein, Low-Carb Broccoli Cheese Bites

    These cheesy broccoli bites are the perfect solution if you’re looking for a low-carb, high-protein, and incredibly delicious recipe. Ideal for a healthy snack, a keto meal, or meal prep, they combine the crunch of broccoli, the meltiness of cheese, and an excellent source of protein without flour or refined carbohydrates.

    Ingredients (6–8 servings):

    1 cup steamed broccoli florets, finely chopped (well drained and dried)
    1 cup shredded cheddar cheese
    1/2 cup shredded parmesan cheese
    2 large eggs, beaten
    2 tbsp unflavored whey protein isolate
    (optional but highly recommended to boost protein without carbs)
    1/2 tsp garlic powder
    1/4 tsp salt
    1/4 tsp 1 teaspoon black pepper
    Cooking spray or oil

    Instructions:

    Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

    Steam the broccoli for 2–3 minutes, until tender but still bright green. Drain thoroughly and squeeze out excess water with paper towels.

    In a large bowl, combine the broccoli, cheddar cheese, Parmesan cheese, eggs, whey protein, and seasonings.

    Scoop about 1 tablespoon of the mixture into balls or small discs.

    Arrange them on the baking sheet and lightly spray with oil.

    Bake for 20 to 25 minutes, until the bites are golden brown and crispy around the edges.

    Let cool for a few minutes before serving.

    Tips & Variations:

    Add a pinch of sweet chili powder or smoked paprika for extra flavor.

    Substitute mozzarella or Emmental cheese for the cheddar.

    Delicious with a low-carb Greek yogurt and garlic sauce.
