    Cheesy Spinach Ricotta Ring

    This Cheesy Spinach Ricotta Ring is a flourless, high-protein, low-carb recipe that’s perfect for healthy dinners, brunch, or meal prep. Made with ricotta cheese, eggs, spinach, and Parmesan, this easy baked cheese ring is rich, creamy, and naturally gluten-free no flour needed!

    Ingredients:

    Sliced melting cheese (mozzarella, provolone, or gouda)
    1 bunch spinach, cooked and squeezed dry
    2 cups ricotta cheese
    3 large eggs
    ½ cup grated Parmesan cheese (+ extra for topping)
    Pinch of salt
    Black pepper, to taste
    Tiny pinch garlic powder

    Directions:

    Grease a 9.5-inch ring or bundt pan. Line the bottom and sides completely with sliced cheese, overlapping to avoid gaps.
    In a large bowl, mix spinach, ricotta, eggs, Parmesan, salt, pepper, and garlic powder until smooth.
    Pour the mixture into the cheese-lined pan and smooth the top. Sprinkle with extra Parmesan.
    Stovetop method: Place the pan in a snug pot, cover, and cook on low-medium heat for 20 minutes.
    OR
    Oven method: Bake at 350°F (175°C) for 25–30 minutes, until fully set.
    Rest for 5 minutes, then flip onto a plate. Lift off the pan, slice, and serve warm or chill and reheat later.
